Oven-Baked Salmon Fillet with Roasted Vegetables
Ingredients:
- 2 salmon fillets
- 1 zucchini, sliced into rounds
- 1 yellow bell pepper, sliced into strips
- 1 carrot, cut into sticks
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp paprika
- 1 minced garlic clove
- Salt and pepper to taste
Instructions:
- Preheat the oven to 200°C (400°F).
- Spread the vegetables on a baking sheet, drizzle with olive oil, season with salt and pepper, and bake for 10 minutes.
- Place the salmon fillets on top of the vegetables, drizzle with lemon juice, and sprinkle with paprika and garlic.
- Bake for an additional 15 minutes and serve warm.
