Oven-Baked Salmon Fillet with Roasted Vegetables

Ingredients:

  • 2 salmon fillets
  • 1 zucchini, sliced into rounds
  • 1 yellow bell pepper, sliced into strips
  • 1 carrot, cut into sticks
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp paprika
  • 1 minced garlic clove
  • Salt and pepper to taste

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Spread the vegetables on a baking sheet, drizzle with olive oil, season with salt and pepper, and bake for 10 minutes.
  3. Place the salmon fillets on top of the vegetables, drizzle with lemon juice, and sprinkle with paprika and garlic.
  4. Bake for an additional 15 minutes and serve warm.
